During the peak of the 2008 recession, a time marked by widespread economic uncertainty and financial constraint, two ambitious entrepreneurs, Jake Sapstein and Derek Cortelyou saw not an obstacle, but an opportunity. They envisioned a community hub that would offer more than just a quick bite or a caffeine fix. Driven by a desire to revitalize a rather barren corner of the South Chicago community, which desperately needed culinary diversity, they founded Robust Coffee Lounge.

Their mission was straightforward: to bring a higher quality and broader array of food and beverage options to the South Central area, a neighborhood that had been historically underserved by local businesses, especially during the economic downturn in 2008. Providing a much-needed sense of normalcy and indulgence during a difficult economic period.

Chicago’s Best Coffee Lounge

Robust Coffee Lounge gained recognition from Chicago’s WGNTV9 in 2018, particularly for their specialty sandwich, “Bubby’s Classic Grilled Cheese.” This item features a generous amount of melted cheese, caramelized onions, and tender pulled brisket!
